Ingredients:

  • Tortilla Chips
  • Cucumber
  • Bell Pepper (Red)
  • Shallot
  • Avocado
  • Fire Roasted Corn
  • Black Beans
  • Feta Cheese
  • Light Mayo (~ heaping spoonful)
  • Plain Greek Yogurt (~ heaping spoonful)
  • Lime
  • Salt
  • Garlic Powder
  • Onion Powder
  • Chili Powder

Chop cucumber, bell pepper, shallot into small pieces.

Drain and rinse beans.

Add all ingredients to large salad bowl. Eyeball seasoning amounts and lime, but don’t overdo the mayo and yogurt. A heaping spoonful of each should be good.

Mix salad.

Pit and slice avocado and add to each serving (it keeps better if the avocado is not mixed into the salad).

Scoop with tortilla chips.
