These ingredient amounts make roughly five 1L Noodle Jars.

Ingredients:

  • Bouillon (1/2 Tbsp.)
  • Chili Crunch Oil (1/2 Tbsp.)
  • Minced Garlic (1 Tbsp.)
  • Sesame Oil (1 Tbsp.)
  • Soy Sauce (1 to 2 Tbsp.)
  • Bell Pepper
  • Shredded Carrot and Cabbage
  • Green Onion
  • Mushroom (optional)
  • Shelled Edamame
  • Firm Tofu
  • Clear Thin Vermicelli Noodles (Rice noodles recommended, but we like pea flour pasta as well)
  • Corn Starch
  • Olive Oil

Cut tofu into small-ish pieces. Toss in bowl with a couple tablespoons of soy sauce. Toss again, adding a bit of corn starch periodically until reasonably coated. Fry the tofu on the stove in some olive oil until crispy. This takes a while, and is very resistant to burning, so you can work on the rest of the prep while it is frying, just periodically turn so all sides get crispy.

Add to each jar:
1/2 Tbsp. bouillon
1/2 Tbsp. chili crunch oil
1 Tbsp. minced garlic
1 Tbsp. sesame oil
1-2 Tbsp. soy sauce
1/4 cup Edamame

Split tofu into 5 equal portions and add to jars

Chop about half a bundle of green onions, split into 5 equal portions and add to jars.

Slice Bell pepper into thin spears, split into 5 equal portions and add to jars.

Add mushrooms to jar, if desired.

Add shredded carrot and cabbage to each jar.
If shredding carrots yourself, use a peeler.

Add noodles, seal and refrigerate jar.

HOW TO PREPARE:

If using rice noodles:
Remove jar from fridge and let sit for 30 minutes to an hour to warm up to room temperature. This is so that the jar does not break when adding hot water.

Boil water in a pot or kettle. Add boiling water to jar, let sit for ~5 minutes. Stir and eat!

If NOT using rice noodles, or if you don’t have access to boiling water:
Fill jar with warm water (not boiling). Let sit for 15 minutes to an hour, depending on noodles. This is to hydrate the noodles so they cook quickly. Noodles are ready to cook when they become soft and flexible.

With lid OFF, microwave jar on high for 3-6 minutes, watching for the water to boil. Once water is boiling, let it microwave for ~20 more seconds. Let sit for ~5 minutes. Stir and eat!
