Ingredients:
- Cherry or Salad Tomatoes (~ 2 pints, to cover bottom of baking dish. Roughly 2 small containers or 1 large one)
- Gnocchi
- Italian Marinated Mozzarella Balls
- Garlic Herb Marinade (only needed if you can’t find marinated mozzarella)
- Italian Sausages (cooked, package of 4)
- Fresh Basil
- Italian Seasoning (optional)
- Red Pepper Flakes (optional)
- Salt
Preheat oven to 400°F.
Cover bottom of wide baking dish or sheet with tomatoes.
Drizzle marinade from mozzarella balls, or from separate marinade, onto tomatoes. Add salt to taste, as well as Italian seasoning and red pepper flakes if desired.
Cover dish with aluminum foil and bake for 20-25 minutes.
Start heating a pot of water to cook gnocchi. Once gnocchi is cooked (it is fast), drain and set aside.
Cut sausage into half moon pieces and set aside.
Once done baking, remove dish from oven and discard foil covering. Very carefully pop all tomatoes with a potato masher. This can make a mess, so be gentle. If this is difficult, bake for a few minutes longer.
Add fresh basil and gnocchi and stir well with all the juices from the tomatoes. Once stirred, add the sausage on top and spread evenly, but don’t stir so the sausage can get slightly crispy.
Put baking dish back in oven for another 20-25 minutes uncovered.
Once done baking, remove dish from oven, add mozzarella pearls to top evenly, and add back to oven for another 5-10 minutes, or until cheese is melted and slightly browned. Broil for a minute or two if you are impatient for cheese browning.
Remove from oven, add a little more fresh basil if desired, and serve.
