Ingredients:
- Tortilla Chips
- Bell Pepper (Red)
- Jalapeno
- Red Onion
- Tomatoes
- Avocado
- Fire Roasted Corn
- Black Beans
- Taco Seasoned Meat (Ground Beef, Chopped Chicken, etc.) (~ 1 lb)
- Taco Seasoning (for meat)
- Cheese
- Lime Juice
- Salsa Verde
- Plain Greek Yogurt or Light Mayo (~ heaping spoonful)
Cook meat with taco seasoning.
Chop bell pepper, jalapeno, and red onion into small pieces. Slice tomatoes.
Drain and rinse beans.
Add all chopped vegetables and the tomatoes, beans, corn, meat, yogurt to salad bowl.
Eyeball lime juice to taste. Mix salad.
Pit and slice avocado and add to each serving along with cheese and salsa verde (it keeps better if these ingredients are not mixed into the salad).
Scoop with tortilla chips.
